We recently had the privilege to speak with Cortney and Josh McCullough for a Zukin Realty Commercial Business Partner Spotlight, who is a managing partner of 3 West Hospitality, to discuss what makes Jolene’s so special.

What inspired you to open Jolene's in West Chester, and how did the concept come to life?

This has been a passion project for my husband-owner, Josh McCullough. We moved to Philadelphia in 2001 because Josh wanted to work at Le Bec Fin, and he worked there from 2001 to 2006. French food has always been his passion. He’s done other things in the culinary arts, but when we moved to West Chester in 2015, there wasn’t a French restaurant, and it’s always just been brewing in the back of Josh’s mind. And when Scott (Zukin) showed him the space where Jolene’s now resides, Josh said to me, “I think this space is perfect, and I think now is the time to open Jolene’s.”

For over a decade, West Chester Residents Loved Gilmore's. Was any inspiration taken from them?

Sadly, we never experienced Gilmore’s before their closing. We didn’t move to West Chester until 2015. Gilmore’s was already closed for many years by that point; we heard about it often, but we never had the chance to experience it. But we’re very aware Gilmore’s has a special place in the hearts of so many people who live in West Chester.

How would you describe the atmosphere and vibe at Jolene's to someone who's never been there before?

I’d describe Jolene’s as warm, elegant, and lively without being stuffy. It has the feel of a classic French fine dining restaurant — polished and refined — but with a modern energy that makes it approachable. No tablecloths, come as you are. We’re just throwing a dinner party every night.

What makes Jolene's menu stand out compared to other local spots? Are there any signature dishes or drinks customers can't miss?

Aside from being the only French restaurant for miles, Jolene’s is one of the few true fine dining destinations in the area—where hospitality is treated as a craft, not an afterthought. Our team is made up of career professionals who live and breathe service. That passion shows in every detail: from the precision and elegance of our food and cocktails, to the warmth and polish of the service itself. When it comes to food and drink, we’re not serving burgers and draft beers under the glow of a television. We source the finest ingredients available and give them the time, technique, and care they deserve. The result is refined, soulful cooking and cocktails made with intention. And for wine lovers, Jolene’s pours 16 wines by the glass every night—including two Champagnes—so guests can explore and indulge without compromise.

How do you source your ingredients, and how important is freshness and quality to what you offer?

For us, sourcing is everything. We chase ingredients with character—produce from local farms at its peak, seafood pulled from the New Jersey coast just hours before it reaches our kitchen, and specialty items from artisans who live for their craft. It’s about flavor, season, and a little romance in every ingredient.

Our wine list follows the same philosophy. We work with small, independent importers who bring us bottles from passionate winemakers—mostly in France, but also from a few unforgettable corners of the world. These are wines you won’t stumble across at a state store. Each one is chosen for its story, its soul, and the way it makes a meal feel alive.

What's been the most rewarding part of running Jolene's in the West Chester community?

Jolenes adds the French spark — Champagne, Burgundy, Parisian energy — to that ecosystem, and together with our neighbors, we create something vibrant that’s greater than the sum of its parts.

How do you think Jolene's contributes to the food and culture scene in downtown West Chester?

What's the most popular item on the menu right now, and what do you personally recommend?

Chef is making a Moulard duck breast from the Hudson Valley, and it is the star of the menu as we head into fall —rich, perfectly cooked, and deeply satisfying. I love it paired with a glass of Château Teyssier Bordeaux.

Are there any upcoming specials, events, or seasonal menu items guests should know about?

Our monthly wine dinner takes place on the last Wednesday of every month. This September, it will be hosted by West Chester’s own Gregg Bechtel of The Artisan’s Cellar. Guests will enjoy a handpicked selection of low-intervention and natural wines, perfectly paired with a five-course meal crafted by our chef and team. These dinners always sell out and are a lot of fun.

What's your vision for Jolene's over the next few years, and how do you hope to continue growing within the community

I would say, when you open a restaurant with your ideas and then…the restaurant takes on a life of its own. Your customers and their experience shape you, guide you. In some ways, it is a collaborative effort, and we are growing together with the community. We’re constantly trying new ideas and pushing ourselves, while maintaining our deepest aspirations. We’re building a strong team, and everyone is incredibly passionate about what we do. So, we’re just excited about serving our community and making sure that each time we open our doors, each table is enjoying a fantastic dinner party experience that feels unique and special to them, and we want to provide that experience for many years to come.
